Pol Roger was known to be Churchill’s favourite, and it’s also the Champagne of choice for royal weddings. 33 meters below street level, their cellars are three degrees cooler than other Champagne cellars – a tiny variation which makes all the difference. It slows the fermentation right down, which intensifies the flavours and creates extra-fine bubbles. It’s full of pear, mango and honeysuckle flavours – but rich and biscuity. Sublime with dressed crab.
