The weather. The water. The peat. These elements, plus more than 220 years of experience – Highland Park was founded in 1789 – go into making this Orkney-made whisky a winner. Of all the sublime single malts made in remote Kirkwall, this is the most awarded. It’s matured in a mix of sherry and American casks. Expect notes of ripe cherry, cacao, honeycomb and candied orange. There is a distinct peaty character, too, and even a lick of salty sea spray. Pair it with meaty fish like mahi mahi, cooked in bold Indian spices, and you won’t be disappointed.
