Acquired by the Bollinger family in 2005, Ayala has been brought back to brilliance by winemaker Caroline Latrive who is one of few female Chef de Caves at the helm of a Grande Marque Champagne House. Previously only available in top restaurants, the Brut Majeur Extra Age has benefited from an additional 12 months ageing in the Ayala cellars, providing depth and savoury complexity, alongside notes of dry, toasty citrus and soft bubbles.
