Biodiversity and conscious farming are key at Cono Sur, who were one of the first producers to be certified as carbon-neutral in Chile. Every worker uses a bicycle to zip around the vineyards, which are dotted with solar panels. And their most effective pesticides are flocks of free-roaming geese. It’s a win-win situation. Because healthy, natural soils mean the tastiest grapes and, most importantly, great Viognier. It’s fresh and lively, with flavours of apricot, peach, citrus and sweet oak. Try it with pork chops and rosemary.
