Château le Vieux Fort scraps grapes that aren’t sufficient for this blend. This, known as yield control, is an expensive process that brings quality, not quantity. And the estate has been awarded prestigious Cru Bourgeois status as a result. Cabernet Sauvignon and Merlot rule the roost in Bordeaux. And this is made from almost equal parts of both. The Merlot brings the body, while the Cabernet Sauvignon adds tannins and acidity – which make claret famously suitable for ageing. Oak maturation increases the tannins and imparts hints of vanilla and earth. Great with roast beef.
