Jura is considered an up-and-coming region in the wine world, and Caveau de Jacobins have been making wine there for over 100 years — their cellar is located in a unique 13th century Jacobin church. It’s safe to say that they’ve perfected their version of the region’s signature sparkling wine. The base wine is a blend of Chardonnay and Pinot Noir, and it’s fermented in temperature-controlled stainless steel to preserve its aromatics. Add 12 months on texture-imparting lees, and you’ve got a brilliant recipe for fine crémant. Expect delicate bubbles and notes of lemon zest, dried apricot and brioche.
