With rugged coasts and wild moorland, Orkney isn’t the most hospitable of places. But it’s a pretty fine spot for making whisky, as the Highland Park distillery shows. They’ve been producing it here since 1798, staying put in windy, rainy Kirkwall because the local conditions are perfect for producing and aging delicious single malts. This 12-year-old has flavours of orange, fruit cake, honey and cinnamon. You might not have considered pairing whisky with food, but this one will match nicely with venison or sushi.
