While it may be lesser-known among Chardonnay lovers, France’s southerly Limoux appellation is a great spot for the grape. And at Domaine de la Métairie d’Alon they are especially dedicated to creating the finest with organic hand-picked fruit. Le Palajo is just one of their vineyards. Perched at the highest altitude in the region, its grapes have a Burgundian-style elegance, thanks to a balance of cooler nights and sunny days. Expect aromas of pastry, jasmine and orange blossom, followed by lemon and apricot flavours. Partner it with crab ravioli, cheese soufflé or prawn risotto.
